Nonna's Almond Biscotti
Original Italian Recipe

1  cup sugar
1  stick unsalted butter melted
3  tbl amaretto
2  tsp pure almond extract
1  tsp pure vanilla extract
1  cup coarsely chopped almonds
1  cup (optional) of your favorite chips
   (chocolate, butterscotch, etc.)
3  large eggs
2  3/4 cups all-purpose flour
1  1/2 tsp baking powder
1/4  tsp salt

Stir together sugar, butter, amaretto and extracts in large bowl, then stir in almonds, chips, and eggs.  Stir in baking powder and salt.  Chill dough, covered, 30 minutes. Using moistened bands, halve dough and form 2 (16" x 2") loaves on an ungreased large baking sheet.  Bake until golden, about 30 minutes.  Transfer loaves to a rack and cook 15 minutes.  Cut loaves into 3/4" slices with serrated knife.  Arrange biscotti, cut side down on a clean baking sheet and bake until golden - about 20-25 minutes. Transfer to rack to cool.  Yields 40 cookies.
