Fresh Strawberry Salad With Nutty Vinaigrette

4 heads of Bibb lettuce (or baby spinach)
4 cups of halved fresh strawberries
Honey-Nut Vinaigrette

Wash and spin each head whole
Cut each head in half lengthwise
Remove core and a few inner leaves to create a small well
Arrange on individual decorative salad plates
Link to Colorful Floral Specialty Plates
Fill each half with ½ cup strawberries
Drizzle with Honey Nut Vinaigrette
Garnish edge with stem-in strawberry & lime slice
Optional: sliced cucumber

YIELD: Serves 8; 110 calories per serving

Honey Nut Vinaigrette
¼ cup + 1 T honey
¼ cup white wine vinegar
3 T water
1 T Dijon mustard
3 T coarsely chopped unsalted roasted nuts (peanuts or almond)
2 T chopped green onions

Combine first 4 ingredients in electric blender;
Cover and process until smooth
Stir in nuts and green onions
Transfer to container for pouring
Refrigerate for at least one hour
YIELD: 1 cup
