Feta and Cherry Tomato Bread

 

Serves 4-5

Prep time: 20 minutes

Cooking time: 50 minutes

 

Ingredients:

# 250 g (2 1/2 c.) of flour

# 4 eggs

# 8 cl (1/3 c.) oil

# 8 cl (1/3 c.) dry white wine

# 200 g (7 oz.) feta, cubed

# 250 g (8 oz.) cherry tomatoes

# 150 g (5 1/2 oz.) grated gruyere cheese

# 1 packet of yeast

# Herbs de Provence

 

Directions: Preheat the oven to 350 degrees F (180 degrees C). Mix the flour and eggs together and stir in the oil and white wine. Add the Gruyere cheese, herbs de Provence, yeast, feta, and cherry tomatoes. Pour into a floured and buttered galantine mold or bread pan, filling only 2/3 full to leave room for rising. Bake for 45-50 minutes. Cool completely on a rack before slicing.
