Clean the mussels under running water and keep cool.

Sauté the chopped shallots with butter for 2 minutes in the Staub Mussel Pot, Add the diced Prosciutto and cook for 2 more minutes on medium heat. Pour the white wine in the pot and bring to a boil. Add all the mussels and cover. Cook until all the mussels are open.

Go To Market:
* 6 lbs. of mussels                           * 6oz butter
* 1 ½ cup white wine                       * Salt and pepper
* 3 large chopped shallots                * 3 Tsp. Chopped parsley
* 12oz diced Prosciutto

The Staub Mussel Pot: Why Is This Pot Different?
Introducing an inspired new concept from STAUB: the single tilting mussel pot with integrated strainer. This patented system allows mussels to be separated from the cooking juices so that you can savour this tasty seafood. A stainless steel strainer at the end of the egg-shaped cocotte keeps the mussels to one side and, by slightly tilting the cocotte, the juice can be gathered straight away, so that you can soak it up without having to dig about between the mussels or wait until they have all been eaten.

This black enameled cast iron mussel pot has a lid with a nickel-plated knob, and a special smooth enamelled base compatible with all heat sources, including induction. The mussel pot holds 800g (about 1 litre) of mussels per person, and you can serve straight from the cocotte at the table.
